From Loreto's marina, just take the first right on Calle Agau Dulce (dirt road). Fernando's Fish Fillet and Cleaning is located just up the road on the right hand side, number 160.
No reservations needed. First come first serve here. Just drop on by, and Fernando will Fillet the fish however you want.
